Minestrone soup is one of my very favorite soups of all time.. and I tested and restested this recipe until it reached perfection. Trust me, this one is the best.
I know some kids have a hard time with a lot of chunky veggies in soup. If that is your kids, try blending some of the veggies with an immersion blender to make it more of a creamy soup! Also- try some fun shapes.
